If you have ever gone to a restaurant and ordered the coconut shrimp, then you know why we developed this recipe.  The sweet flavors of the toasted coconut combined with the saltiness of the shrimp is a beautiful pairing, combine that with the sweet and spicy tropical dipping sauce and you have a flavor combination that will make you want to play Jimmy Buffet tunes and chill out under a palm tree to enjoy them.  They are easy and best of all, they are delicious!  Click the link for the recipe video and watch how easy Captain Ron prepares these tasty treats from the sea.


  1. Fill two bowls, one with the egg whites and one with the shredded coconut.  Beat the egg whites to combine.  Dip a shrimp in the egg whites to coat, then in the coconut.  Press the coconut into the shrimp.  Once coated, place the shrimp on a rack and repeat with the remaining shrimp. 
  2. Place the shrimp in the refrigerator to set while you make the sauce and prepare the grill.  This will help the coconut stick to the shrimp while grilling. 
  3. Prepare your dipping sauce by combining all ingredients and set it in the refrigerator for later. 
  4. Fill your grill with FOGO Premium Charcoal and prepare it for raised direct grilling over medium heat.
  5. Scrape your grill grate clean with a wooden grill scraper.
  6. Skewer each shrimp trying to get the skewer through the meatiest parts of the tail.  Fill each skewer to the tip.
  7. Lay the skewered shrimp on the grate and cook for 3-5 minutes, checking to make sure the coconut isn’t burning.  When the coconut has started to brown and the shrimp has turned pink on the grill side, flip each skewer over and repeat for each skewer.
  8. Remove the skewers from the grill when they are done cooking.  
  9. Serve the toasted coconut shrimp with the dipping sauce that you put in your refrigerator.  You kind of forgot about that, didn’t you?
