Welcome back to another exciting week of The FOGO Life. Last week we showed you how we unpackaged, assembled and seasoned the new FOGO Cotton Gin Smoker. This week, we got to do our favorite thing in the world, we got to cook an epic cook. We hung three USDA Prime grade tomahawk ribeye steaks and then reverse seared them. Which means that we first “roasted” them using indirect heat, removed them, cranked up the heat and then laid them on the blazing hot deflector shield to get that crust super seared! Yes, that’s right, I said it, SUPER SEARED!!!
The smoker itself is very simple to use. Just fill the charcoal basket with charcoal, light it and set it right in the bottom of the smoker. That’s it, set your vents to where you want them for your desired temperature and you’ll be cooking in no time at all. The ease of using this fantastic cooker and the incredible flavor that it provides made this one of my favorite videos to make.
The cook went as smooth as we could have hoped for. The drum held temperature perfectly even with the top being open for so long while we took pictures and video. We hung them from the top rack and let them go until they hit 115° internal temperature. At that point we took them out and rested them and opened the vents to let it heat up, and heat up well, it did! If you want to know how the rest of this cook went, you’ll have to watch the video! Trust me, its cool!
