The ultimate grilled cheese sandwich

Let’s finish off the week with the right foot, what better way to do it with this gooey, smokey, bacon wrapped, three cheese grilled sandwich (wow that’s a mouthful, pun intended!). I am a big fan of grilled cheese, whether it is just a simple take on it or a fancy one with truffles, I am truly a sucker to try anything and everything on a grilled cheese.

Today I wanted to share with you a recipe, for those of you who love grilled cheese I totally recommend you to try this on your grill, it is unlike doing it on a stove. With this recipe, you will be able to transform this classic comfort food into something even more amazing and packed with various flavors.

  • FOGO Super Premium Lump Charcoal
  • Bread (make sure to pick a good quality bread)
  • 3 different types of cheeses
  • Bacon


Create your grilled cheese sandwiches, making sure you put enough cheese to get that perfect balance with the bacon.

Once you have your sandwiches set up, take the bacon strips and start wrapping them around, you can put as much or as little as you want (no one is judging when it comes to bacon).

Set up your grill for low and slow and on indirect heat, you want to make sure that you give time for the grilled cheese to absorb that smokiness and for all flavors to come together. The cooking temperature should be set at 250F.

Put your grilled cheese in the grill for about 30 to 40 mins. The time will all depend on how crispy you want that bacon layer to be, so make sure to keep an eye on it. 

And... that’s it! Simple as that.  

The cool thing about grilled cheese sandwiches is that they can be so versatile, so feel free to add on any of your favorite ingredients into this recipe, there is no wrong ingredients. In my case, I would usually choose a cheese with a little spicy kick to it as I know it will go great with the crispy bacon crust, or aged cheddar which adds on that great sharpness that I so much enjoy. Maybe try adding tomatoes and spinach for some acidity and freshness. The possibilities are endless and if you have a numerous family as I do, you’ll be able to serve all the different taste buds around the table.

The Best!!!

This lump charcoal really is lumps, and large ones at that. Great for long burn times. The price is very reasonable and shipping is free so it is also a good value.

Great BBQ Flavor

FOGO charcoal burned even and smooth, leaving very little ash to clean up. The ribs had a perfect amount of smoke flavor.

Same great charcoal, smaller lumps for searing steaks

I have been very impressed with the large lump FOGO charcoal on all of my long term, low and slow cooks on my Green Egg. For those times I want to sear a steak, rare to medium rare, the smaller lumps fire up faster, and provide a nice level bed of searing coals. I like the specialized sizes offered by FOGO.
