Breakfast on the Grill

Ingredients
- Fogo Premium Lump Charcoal
- 1 16oz package of ground maple sausage
- 4 pieces of sandwich bread
- 8 eggs
- 1 Avocado for topping
- Smoked Paprika
- Kosher Salt
- Black Pepper
Directions
Heat up the grill and add your griddle accessory or cast iron skillet and aim for 300-degree surface temperature. Use the lid to a small jar or the opening of a small jar to make a hole in the middle of the 4 pieces of bread.
Keep the inside of the bread and set aside. Slice the sausage and form into patties.
Grill the sausage until cooked through and set aside.

Mix 4 eggs and dip the bread into the egg mixture. Flip it to soak the other side of the bread and then put it on the griddle. Do this for all 4 pieces.
After the first side has browned, flip it and then crack an egg into the hole. Season with a little pepper.
When the egg white turns from opaque to solid white, it is ready to come off the griddle.
Use the 4 holes from the bread and mix in the egg mixture and cook those as well. They make a great bed for the sausage patties to sit on or make a little sandwich.
Slice an avocado and place on top with a little smoked paprika and kosher salt.Â
If you are looking to make this recipe a little bit more healthy, you can substitute the sausage with turkey or chicken sausage and use whole grain or sprouted bread slices.
