Watermelon might not be the first thing that comes to mind when you fire up the grill, but one bite will change your perspective. The heat lightly caramelizes the natural sugars, adds subtle smoky flavor, and creates beautiful grill marks while keeping the fruit juicy and refreshing. Paired with peppery arugula, crisp cucumber, tangy feta, and a bright lemon vinaigrette, this grilled watermelon salad is the perfect balance of sweet, savory, smoky, and fresh.
Whether you're serving it as a light appetizer, alongside grilled steaks, or as part of a backyard cookout spread, this salad proves that the grill isn't just for meat—it's one of the best tools for elevating fresh produce.
FOGO Tip: Use FOGO Premium Black Bag for a clean-burning, hot fire that quickly caramelizes the watermelon without overcooking it. High heat is key to getting beautiful grill marks while maintaining the fruit's firm texture.
Recipe:
Step 1: Fire Up the Grill
Light your grill using FOGO Premium Black Bag Lump Charcoal and set it up for high direct heat (450–500°F). Clean and lightly oil the cooking grates.
Step 2: Prepare the Watermelon
Cut the watermelon into your desired serving size, keeping the pieces thick enough so they're easy to flip on the grill. We used a small bowl to cut the watermelon into uniform, circular pieces.
Lightly drizzle each piece with honey. This helps encourage caramelization and enhances the natural sweetness.
FOGO Tip: If you want even deeper caramelization, lightly sprinkle the watermelon with sugar before grilling. With the proper grill temperature, however, the natural sugars and honey should be more than enough.

Step 3: Grill the Watermelon
Place the watermelon directly over the hot coals.
Grill for about 2–3 minutes per side, just until distinct grill marks appear and the edges begin to caramelize. Avoid overcooking—the watermelon should remain firm.
Remove from the grill and let cool slightly.

Step 4: Prepare the Salad Mix
In a large bowl, combine:
-
Arugula
-
Thinly sliced red onion
-
Cucumber
-
Crumbled feta
Dress with lemon juice and olive oil, then season with kosher salt and freshly ground black pepper. Toss gently until evenly coated.
Step 5: Plate & Finish
Arrange the grilled watermelon on a serving platter.
Top with the arugula salad, allowing some of the watermelon to remain visible.
Finish with a generous sprinkle of sumac for a bright citrusy finish. Garnish with fresh mint leaves if desired.

Master the Fire Tips
-
High heat is your friend. A hot charcoal fire creates quick caramelization without making the watermelon mushy.
-
Don't move the watermelon too early. Let it sear before flipping to develop bold grill marks.
-
Balance every bite. The sweetness of the watermelon, the saltiness of the feta, the peppery arugula, and the tangy sumac create a perfect combination of flavors.
-
The First Ingredient: This recipe is proof that the grill can transform even the freshest ingredients. Once you've tried grilled watermelon over natural charcoal, you'll never look at fruit the same way again.
