Treat Mom to Something Special This Mother’s Day – Caesar Chicken Sandwich, FOGO Style
Mother’s Day is the perfect excuse to fire up the Big Green Egg and show Mom just how much she means to you—with a little grilled magic from Captain Ron and FOGO Charcoal.
This year, I decided to take that viral Caesar chicken sandwich that’s been making the rounds online and kick it up a notch the only way we know how: by grilling it over FOGO Super Premium Lump Charcoal on the Big Green Egg. No stovetop, no shortcuts, and definitely no pre-made dressings here—just bold flavor, fresh ingredients, and that unmistakable kiss of real wood-fired smoke.
The sandwich is everything you want for a backyard Mother’s Day celebration: crispy, juicy grilled chicken thighs, a tangy Caesar-style dressing that’s a copycat of Texas Roadhouse Grill’s famous version, and a toasted bun that brings it all together. It’s lighter than your usual BBQ fare, but still packed with enough flavor to make Mom ask for seconds.

Directions:
- Mix all dressing ingredients together and whisk until fully combined. Place dressing in the refrigerator. Make the salad dressing a day ahead, or at least 2 hours before serving Mom this delicious meal.
- Fill your grill with FOGO Premium Charcoal and prepare it for direct grilling over medium high heat. Arrange 4 FOGO fire starters around in the coals. Use a grill torch to light the starters. Allow the fire to build while prepping the chicken.
- Trim the thighs of any excess fat. Season with the Greek Fleek seasoning. Not too much but a decent coating is all that s required. Set aside in the refrigerator.
- Lightly coat the head of Romaine with olive oil.
- Grill the chicken until it reaches at least 165°. You can go to 185° if you choose. In the last few minutes of grilling, place the lettuce on the grill. Grill the Romaine until it develops a slight char. Flip and grill on all sides.
- Remove all food from the grill when done. Slice the romaine down the center and then cut it cross ways in 1” strips. Add to a bowl, add your desired amount of dressing and combine until fully coated.
- Place the buns, flat side down on the grate until it develops a golden brown. Remove them from the grill.
- Assemble the sandwich. Place a thigh on the bun, top it with the dressing. Hand it to Mom and watch her glow as she bites into this terrific treat you just
