A perfect recipe for a night of pre-gaming, or just kicking back and watching a game, these beer brats are the best! The beer, seasoning and onions add to the flavor of these bratwurst sausages, grilled to perfection! Throw in some sauerkraut, and don’t forget the mustard.
For this recipe, first, you mix the magic of braising in a dutch oven with charcoal grilling. Forget about stove-up recipes. Light your fire, set up the grill for indirect heat at 350 degrees F and add your dutch oven to the grill. You will need to make sure it has an air gap between the plate setter (heat deflector) and the dutch oven, so it does not get too hot. A grate or even a few balls of foil will work.
Add the ½ stick of butter to the pot and let it melt. Add the red pepper and stir. Slice the onion into large slices and put them in the hot dutch oven with a pinch of salt and pepper. Sweat the onions for about 5 minutes, then add four lager beers. It works better if you let the beers come to room temperature first. Add the bratwurst once the beer is warm and about to simmer. Let the sausages simmer in the beer for about 30 minutes.

Remove the brats and put them on a pan. Remove the onions from the liquid and strain them to use as a topping on your brat. Set up your grill for direct heat and cook the brats until they are cooked to your liking. Remove the brats and place wherever you want to serve.
