Reverse Seared Picanha on the Weber

Today, in the 3rd installment of our Weber Kettle series in collaboration with Chud’s BBQ, Bradley will take us through the right way to reverse sear the Queen of Steaks, the picanha.  If you’re not sure what a picanha is, it is a cut so good they had to give it multiple names.  It is also known as a culotte roast, coulotte, top sirloin roast or even the rump cap.  We will just stick with calling it Picanha.

If you are unfamiliar with this cut, it is a very beefy flavored piece with a delicious fat cap on top.  If you’ve ever been to a Brazilian Steakhouse, you may have seen them slicing U shaped steaks off of a skewer directly onto your plate.  That is picanha!!!  Instead of using the skewer method, Bradley shows how to roast it whole and give it a great FOGO sear at the end.  This is a great one that you won’t want to miss.  Warning, you may feel the urge to lick your screen….
