Can Injecting Tallow Improve a Steak?

There are 3 main categories of steak here in the U.S.A., Select, Choice and Prime.  The main difference in these 3 categories is the amount of internal marbling.  If you are not sure what marbling is, allow me to help.  You know when you look at a steak and see all of those thin white lines?  Well, those veins are made up of fat and that is where much of the tenderness and flavor comes from in steak.  Remember the old adage that fat = flavor?  Well, we wanted to see if injecting our own fat into a steak would create a superior product.  Could we make a choice steak into a prime steak?  Maybe we could even make it into a steak that is equivalent to some type of wagyu!  Inquiring minds want to know! 

We started with 2 identical cowboy ribeye steaks and injected one all over with Wagyu Beef tallow.  We coated them in our award-winning activated charcoal rub, cooked them, sliced them and ate them.  Did it make a difference?  Well, you’ll have to click the link for the video and find out for yourself. 

Directions:

  1. Fill your meat injector with the wagyu tallow.  Inject one of the steaks all over with the tallow.  Be sure to insert the needle form the sides, top, bottom and any other way you can think of.  Place the steak in the refrigerator for at least one-half hour.
  2. Fill your grill with FOGO Premium Charcoal.  Using FOGO Fire Starters, light the charcoal and prepare the grill for indirect cooking at 250°.
  3. Coat each of the steaks generously with FOGO “The Rub”.
  4. Insert a Meater thermometer into the center of the steaks.  Place the steaks in the center of the grate and cook until they reach an internal temperature of 115°.
  5. Remove the steaks from the grill and prepare it for direct grilling over medium high to high heat.
  6. Sear each of the steaks over the flames for approximately 1 minute per side or until it has a slight char.  Remove the steaks to a cutting board.  Slice each steak and taste for yourself.  Did the wagyu injection make a difference?
